Cooling System Flow

I have a '53 F-100 with an 8BA flathead V8. Am I correct in thinking that the direction of system flow is from the bottom of the radiator to the 2 pumps, into the block and up through the heads, out the thermostat housing and into the top of the radiator ? This would put the temperature sensitive side of the thermostat reaching below the base of the thermostat housing and into the heads.

Your description of system flow is correct. Thermostats are always marked "TO RAD" on the appropriate side.
