In my experience there are pros and cons to everything. I have been researching e-fueling my 7.3 for a few weeks now. There is very little information on it. I know some of the big pros are opening up the valley by eliminating the fuel bowl and pump. What are the cons of doing a e-fuel conversion. The kit I'm looking at is from Irate Diesel.Any input would be appreciated.
Theres no cons when going e- fuel in the 7.3, well maybe getting a hold of the pre and post filters of E-fuel but you can buy a couple and have them in the shelf.
How well do the pumps hold up to heat? Right now I live in Arizona where it gets pretty warm. With the pumps not being submerged how do they stay cool?
We usually mount the pumps on the frame underneath the bed. They are designed to run without being submerged, the fuel flowing through them cools them to some extent. I have never heard of a problem with an overheating electric pump. With the stock pump system you can check the fuel filter for black discoloration, a sign of oil in the fuel from leaking injector o-rings. You can't do that with e-fuel. That is one of the drawbacks. If you are bottom feeding and buy a cheap electric pump, that can create a reliability problem. Those are the drawbacks that are coming to mind at the moment.
The heat comes from inside the pump not outside, so the fuel going thru coold it of.
The fuel is only cold as air temp when you start it
Once running, the engine heats the fuel up in the heads and dumps the excess pressure back to tank unless you plug the return line ports like they do for SD
Might take a while for a full tank to heat up.
Radiator/engine/trans/turbo will heat up the tanks from air flow when driving
This is why trans pan and diff coolers don't work well. You need a temp difference to cool.
I am unsure why you have had trouble finding information on efuel. There have been tons of threads on it over the years. Take a look at the kit Hitman used. He has been well pleased with it. I built my own with pretty good results. I did a thread on it as well, although it is several years old now. I did link the threads I used as guidance for mine.
If you put a Racor 120 pre-pump filter, you can visually check condition of the fuel if you want to be able to check for oil in the fuel. It's also a good filtration to protect the pump. This is the setup I had in my last OBS that helped me figure out injector orings were done, among other issues.

Could be wrong but OP isn’t looking for specific “How-to” efuel instructions. He’s just making sure he really wants to go efuel by asking for any negatives that might be associated with it. Seems like a good approach to me. Not efuel, but I’ve sure run into problems and unintended consequences when jumping in head first and following someone’s glowing mod instructions.

That is exactly what I want. I don't want to e-fuel and then have to add sumps and draw straws and wish I didn't do the mod. The factory setup seems to work well. Honestly the only reason I'm considering e-fuel is to open up the valley. I'm not building this truck for racing or power I need a reliable truck to do truck things.
