What should 8RT Engine temperatures read using a infrared

What should temperatures read using an infrared in various places on the motor, thermostat housing, radiator top and bottom, etc? Also does the drivers side run hotter than the passenger side?
mine is all over the place.

I took these readings on a 95-deg day, after a hard workout (climbing a hill and then sitting in heavy traffic). 160-deg thermostats, 4-row radiator, fan with shroud. Can't really explain why the center of the head would be hotter than the thermostat housing?

Just a theory off the top of my head, center of the head is right over the siamese exhaust crossover, so it would be the hottest part of the engine. You may not be measuring water temperature, but iron temperature. Water flowing by would be carrying heat away, but not sitting in one place long enough to reach that temp.
