Any tips on getting the caps back on, specifically on the SRW trucks?
I tried to put one on at the dealer that I found on the floor, and could not get it to go back on for the 5 mins I was trying.

Its a possibility that the metal clips in the center cap have moved to a position that wont allow the cap to clip all the way onto the lug nuts.
The metal clips in the center cap have to be aligned in each hole properly or it will never snap on the wheel properly. PITA.
So I didn't RTFM yet. Are we saying that Ford has left us high and dry if we get a flat on the road using provided tools? That would have sucked out in 400 miles of nothingness on Nevada 50 and no signal in many places. And no traffic for hours at a time to boot.

Yes. Theres no way to take the rear center caps off a new dually with the provided equipment from Ford. Completely high & dry.
Keep a ratchet strap under the rear seat. Make sure the hooks on the ratchet straps have the proper curve to the hooks so they fit into the center cap slots. Some strap hooks fit, others do not.
I built a very similar tool as the OP except I screwed a wooden handle on one end of it and now I am able to pull the caps off by hand and not use the other tools from the toolkit as is being demonstrated here. I just keep my center cap removal tool under a rear seat vs wrapping it into the tool kit.
