EGR block off question?

I have read through all of the posts I can find on this and haven't been able to find an answer, so am hoping someone can help me out. I have a 2008 F350 with a 6.4 and am looking into doing blockoff plates on my EGR along with deleting the DPF (I have read through the tuner recommendations and am probably going with the H&S Minimaxx), I do not want to remove all of the EGR stuff because emission is required where I live, and removing the blockoff plates seems like it will be a lot easier than bolting everything back on when I need to renew it, along with bolting the DPF back on. I know the blockoff plates prevent the exhaust from circulation, and the programmer will turn off the dpf, but what happens with the coolant that flows through, does it just continue to circulate if I don't do a full delete and plug it off; and if so then will that hurt anything? I use this truck almost exclusively for towing our 39ft 5th wheel toy hauler, and am not looking for power gains so much as getting rid of the regens and improving gas mileage a bit, so won't be using any aggressive tunes or anything. I appreciate any help that can be given on this.
