Light camper conversion; upgrade brakes?

'03 E350 5.4l camping build-out: 18" fiberglass hi-top, small water storage (5-10 gallons), no propane, a couple of base cabinet units, platform type bed area, maybe no fixed seating besides driver & passenger. probably a heavy duty rear bumper with swing away spare tire mount and swing away secure box/storage. I WILL take it on gravel roads, unimproved roads but never at speed, just crawl along until I feel like I might have difficulty and turn around and park it to be sure I can get out when I need to...

I am looking at PowerStop OE Daily Driver brake discs and pads for the rear, any reason to consider better? they are supposed to be 'as good as or better than stock'. Autospecialty KOE5203 is the model/part number. maybe the better part is ceramic type pads?

Maybe an upgrade would be done up front anyway?
