EOT and ECT Sensors

EOT and ECT Sensors
I was driving to work yesterday when my monitor started flashing at me that my Deltas were greater than 15 degrees, got up to about 58 degrees. I stopped to get fuel, and when I restarted to truck everything was normal.
Fast forward to today, I did a cold soak last night and my coolant was about 8 degrees lower then my oil. Normally it is about 2 degrees lower.
For my drive home today, it did the same thing again after about 20 minutes. Huge deltas, 10 to 15 degree temperature swings in seconds for my engine coolant. My oil Temps stayed about where they normally are 198 to 204.
I haven't had any work done on the truck in a while, so I'm not sure, my gut feeling is that my ECT sensor is going south. Does anyone know of a test for the temp sensor. Should I replace both the EOT AND ECT sensors,
