r01 7.3 runs rough intermittently for a while now (over a year). It is worse when first started but will do it though out the day. While sitting idling it kinda sounds like romp romp romp then normal then romp romp romp more of an advance/rev rather than a miss. It does this throughout the rpm range and gears/speeds. Can't really see the rpm needle change, maybe vibrate a little.
One thing I did notice, the other day I towed a 12,000 lb load for an hour trip and it had near quit about 10-15 miles down the road half hour later it was pretty well gone. That afternoon towing back I don't recall it doing it.
Following days normal driving it started coming back but not quite as bad as before trip. two wks later now its probably back as it was. A few months ago when towing same load it did the same thing, I just thought it coincidental at the time, but I don't think it was coincidental now.
X2 on pull ICP sensor wire and look for oil at the connection. Oil indicates sensor is dying, time for new. Ford or IH is pricey but aftermarket is often crapola. OE for sensors is the mantra.
Also the harness that goes over the driver side valve cover, it can chafe on the VC and cause intermittent shorts. Pull off 42 pin connection or otherwise inspect the underside of the harness. VC should show evidence of arcing there too.
So far you have good suggestions. Our trucks are no typical vehicles and many scanners won't work on them, verifying that your shop's does would be a prudent move.

Just had chance to check, the harness has worn the paint from the valve cover but there is no chaffing on the wires. Going to zip tie a piece of heater hose or something there to prevent the problem in the future though.
Pulled ICP sensor plug and it is full of oil. But running it with sensor unplugged nothing changed. If that was the problem wouldn't it have cleared up?
