I installed the exact same setup on mine and have been towing with it down here in Texas where it gets pretty hot and also pretty cold in winter and have zero complaints about it’s performance. I have over 10,000 miles on it and coolant/oil stays around 198 in winter and 200-205 in summer maybe 210 towing my tractor when it’s over 100 degrees outside. I have no issues running too cool, if your ECT is below 190 you have a thermostat issue.

How heavy is your tractor and how far do you tow it? When my son pulls his 5th wheel, 43 ft toy hauler, he can reach 230 degrees. He hasn't had a problem but I tell him that is to hot. He tows in the ca desert and az as well.

It’s definitely not a 43’ toy hauler. That’s a lot of wind resistance and weight to tow in Arizona heat!

Yes I am, but I haven't driven the truck since October either.

I have the same setup on mine & have been happy with it so far. Haven't towed much, but my ECT's run 192-196 at 75mph, so I don't think the 7.3 clutch keeps it too cool.
