Prep for paint and wait?

As I get into the restoration of my 72 F100, I have decided to start removing panels and tackle the job. I've been doing a lot of research but never found an answer. I obviously have a lot of things to get done, but if I begin to prep my panels for paint, at what stage can I stop in the prep and leave the panels until I am ready to add color/clear without effecting the quality?

Typically, once you apply acid etching primer, that's a good holding point.....and then take it section at a time. As long as it's not exposed to weather, you should be good.
