Have you checked to see if your getting a good squirt of gas into the carb when the throttle is worked? Sounds like the accelerator pump is not working like it should. Things that I have found wrong with that system is bad diaphragms, spring broken or left out in case of recent rebuilds that go behind the diaphragm, check ball and weight left out under discharge nozzle, or linkage that is badly adjusted. Those would be the first things I would be looking at. Dennis
I agree with above. A bog when you come off idle indicates a lean squirt. You can remove the rod from the throttle to the pump, move it closer to the carb, increase squirt.

Note the accelerator pump rod connection at the throttle lever has 4 holes, it provides for seasonal adjustment of the size of the pump squirt. In cold weather (below 40° F) it should be installed at the very top hole, 2nd from the top hole from 40° F to 90° F, 3rd from the top in Arid Zone A and Death Valley etc etc

I did buy the shop manual for Christmas, where did you get the carb manual? Currently the throttle lever is on the third hole down. Texas here, but that does make me think about the rod itself, it was bent up (towards the hood) at one end so I straightened it out.
The shop manual should also have the pump rod settings in the carburetor section. The manuals are in .pdf quite a few places. Mikes Carburetors is online and has a whole passle of 'em. I'm sure there are others. Good rainy day reading.
No matter what anyone tells you carburetors are not "plug and play"! Sure, it will bolt up and run but that doesn't mean it will run like it should or as well as it could. They are super simple only a few adjustments but they are all important. Wet fuel height, idle mixture, power valve, choke pull off, jetting, pump shot, etc. They are considered among the finest engineered carburetors ever made with their annular discharge clusters. They aren't EFI but pretty close if setup right.
