Try 80W90 , check if you have LS clutches in both, if so you need to add a friction additive or you will roast the clutches. The capacity is however much you need to fill the case up to the drain plug, usually 2-3 quarts per axle.
Sterling 10.25" will take more than an 8.8", I'd have 4qt on hand. 80w-90 for light duty but I always run 85w-140 conventional or 75w-140 synthetic. I'll take a little mpg hit over worn parts if hauling or towing.

Um, you fill it up to the FILL plug. There is no drain plug, and if there were, it would be at the bottom.....
The synth 85w-140 should cover you for open or limited-slip. If you're not sure which diff you have, check the AXLE code on the door jamb. If it's a letter and a number, it's limited slip; if it's two numbers, it's open diff.
AFAIK, the factory never shipped a LS front axle in this generation of truck.
