Regarding CEL - you'll get a DTC but probably not a CEL (I think it depends on year. My '03 did not throw CEL). One easy way around is to leave the EGR valve plugged into its harness and just resting on the top of the engine.
Regarding head gasket issues - I don't see that it directly impacts head gaskets - but - the likelihood of significant cooling issues due to leaking EGR cooler leading to large temperature variations, loss of coolant and subsequent potential damage probably has a statistical improvement in longevity as compared to a non-deleted engine.
If you have a 05 or an 06, 07 it will throw a CEL. Only way to turn it off that I’ve heard of is a SCT tuner. There may be other ways but I haven’t heard of them.

Not all 05's will throw a CEL
I've helped with one delete on an 05 and know of a few others, all early 05's that did not light it up.
Thanks for the reply's. I did get the EGR delete kit installed, new cooler, and it seems to run great. Sounds different than before. But my concern is it still is blowing white smoke randomly,not all the time. I've only driven it about 45 miles. Should that residual coolant burn away after more miles? Or is there more issues.
