Probably not a bad deal however not to try and direct your plan but a stroker crank for a 393 could be purchased for 400, rods maybe 150 reconditioned, forged 302 stock type pistons for 250-400. Get it balanced and that would be approximately 1200-1400.
How about this one paw performance offers a complete unassembled kit (long block) 427 $2995 fully balanced and you have some options to decide on such as cam heads etc for that price, you can even pay a little extra for a standard bore block, you just put it together and make sure all the clearances are correct. I noticed you listed 60 over pistons many people wouldn't touch a 351w block with a 40 over much less a 60. Good luck with your decision and truck
DW- I wouldn't think 393W could have stock height pistons AND stock length rods. the extra length stoke of the crank would send the piston above the block deck.

I think what you want to know is how much compression should you run. you can bore and stroke your motor to whatever makes you happy however you would need to select pistons that put your compression in the 8-9:1 range as far as street low boost (9:1 down) if you want high boost then shoot for 8:1 +/- a little. High compression and boost = detonation unless alcohol was in the budget. Good luck, you get it together and you should be able to have some fun
On the 393 stroker issue, just want to clarify
302 (stock compresion height) piston, it can be a custom forged piston. it dosent mean a factory stock piston,
351W (stock rod lenght), where as you can use a custom ground billet aluminum rods, if your budget can stand it. it dont mean factory stock rods.

I think that some people do misunderstand when someone says stock type pistons.
For those who don't know it is any piston that was originally designed for a 302 of any bore and compression, just like DW2455 wrote
