I would also pull the injectors while you have it apart that far and check or replace the injector o-rings. Mine had only 185k on it and I was pretty surprised by their condition. Most of them came out in pieces.
There are oil rail and fuel rail end plugs on each cylinder head. All have o-rings.
Take a good look at your idler and tensioner pulleys. Mine were nearing the end of their life.
If you're going through the effort to pull it, I'd do a compression test first. I bought mine at 195k miles, history unknown, and am rebuilding the engine at 235k. I don't think it makes a lot of sense to do a bunch of stuff "around" the block without knowing the internal condition.
You don't need to pull it to replace the pan, btw. Diesel Tech Ron has some videos on lifting the engine enough to remove the pan, I think.
I've seen one for the older trucks, is there any kind of turbo mounting gasket? Secondly, I hope not to have to fool with these, but what about taking off the exhaust manifolds and remounting with new gaskets and studs?
