Vent through roof is ideal, sidewall vent is worse possible way to vent a fridge, but Sous' already has fans installed and given they are not running continuously, his coil should be doing fine. You reach a point at which trying to simply move more air is not very helpful unless you can also change the flow pattern over the coil which is installation dependent. The concern is not just air flow, but where it is going.
Not sure if most folks remember none of the refrigerator problems came about until manufacturers tried to design them to cool faster and get colder while at the same time installing them in ways they were never intended to be installed.
