Stock ride height, Toyo M608Z 285/70R19.5, I haul heavy so steel wheels is the way for me. ...
From the factory, the 2 steel wheels on the back are rated for 3750# each and the 2 aluminum wheels are rated for 3590# each.
That gives a rear wheel limit of 7500#+7180# = 14,680# (4,680# over the axle rating), and the total truck wheel rating of 14,680#+7180#=21,860# (7860# over the truck GVWR). For the factor configuration, the wheels aren't the limiting factor for hauling heavy.
I take it that the available aftermarket wheels for your wider tires weren't available with ratings as good as the OEM wheels in aluminum?

Absolutely correct in your thoughts. When I was researching wheels in 2011 for my 2008 F450 you had to derate your truck with aluminum 19.5 aftermarket wheels (except the Alcoas as I recall). That may or may not be the case now. I would tow with 5000-5500 on the gooseneck pin, I live in the PNW where there is nothing flat. My normal tow with my British tank on the 9000 lb trailer is 35,000 GVW +- and I'm putting a lot of weight and torque through the wheels on steep hills.
Still my wheels are the limiting factor, the tires are rated for 6400 lb each but that allows me to lower the tire pressure giving a better ride. For a daily driver I like to run 50 or so PSI so I get full tread contact. We ran into a similar situation on our Oshkosh HEMTT 8x8, its 16.00R-20's had a load rating of 15,000 @110 PSI each, but the tires didn't make full tread contact with the road until we lowered the rears to 50 and the fronts to 60. Again a much better ride, and when you haul heavy grab the air hose and adjust upwards.
I think this is one of the best looking trucks I've seen posted on here...
Thanks so much, we tried to balance the right amount of chrome. If it had been a Lariat everything like my last truck, the chrome caps or having the wheels chromed might have been better.
