1988 Bronco Engine fire

I recently came to acquire a 1988 ford bronco from a family member for next to nothing. he had tried to change a fuel injector in it and caught it on fire. it didnt damge the motor compartment too bad, but caught the dash on fire and completely destroyed the dash and all the wiring. It has the 5.0 liter engine in it. other than the fire damage this bronco is in the best shape ive ever seen one in. it has had a new transmission put in it and the motor has been recently rebuit. id really like to fix it and get it back on the road. i have a donor truck to get a new dash and interior wiring out of, but it has the inline six motor. so my plan is to swap the dash and convert the fuel injected 5.0 back to a carburetor. this way i could keep the amount of wiring ill have to do to a minimum. Can someone enlighten me on how much work this will be and what parts ill need and what problems i might run into? and will the transmission still work with out the fuel injection?

If you have patience and time..itll get done but slow. Not sure if ALL of the wiring will work going to the motor. But if you keep it carb'd it would be a little less of a hassle.
