This is the strike plate on my '66 F-100. This info is not in my Chiltons book, I don't have the shop manual yet, and I can not find this exact answer anywhere:
I want to adjust the plate so the door will click shut without having to be pushed in as far as it does now. Is this plate adjustable in a side to side way so I can slide it further out? Would I loosen the two bottom screws to do so?

Yeah, just loosen the screws and move it further to the jamb, a little at a time. Assuming that your door is adjusted properly to the opening, it shouldn't take much. Watch where the "star" and guide hit the striker to make sure the height is right. It should catch once upon closing then click again upon complete closure....trial and error, so to speak.
Thanks resonatuer. I changed the weatherstripping and have let the door sit closed tightly for a few days. I put some teflon lube on the weatherstripping first. Now I want to move it out a hair to allow it to close easier. Good point on keeping it at the same level. I'll use painters tape to mark that line and move the strike plate horizontally along that line.
