I assume you're talking about the axle bearings near the wheels? If so, you need to first remove the axle shafts. Here's a useful video on how to do that:
Then, you use a slide hammer and an axle bearing puller to remove the bearings. You can usually rent these tools at an auto parts store. Watch this video on how to change out the bearings:
In the video, he uses a pry bar to first remove the seal, and then the puller to remove the bearing, but you can actually remove both at the same time using just the puller.

Oh, and when you're at the part store buying new bearings and seals, tell them you have a 7.5" axle. If you tell them you have the 8.8" axle, you're going to get the wrong parts (even if you have an 8.8 axle). I'm not sure which axle your truck has, but I do know it's either the 7.5" or the 8.8 with 28 spline shafts, and both of those axles use the same bearings and seals. So like I said, just get parts for the 7.5 and you'll get the right stuff.
