After it sits all night, take a reading on oil and coolant temp, they should closely match, if not, you need a new sensor. If they are matched, may need a thermostat and/or a new water pump.
that shows the sensors are good. Two choices; Pump and t-stat... start cheap. I'll say the t-stat is designed to fail open and that both oil and coolant are close together (240/245), I'd really be looking at a new pump.
Get the PID right for fan RPM and watch it. Once locked up, its basically one for one, engine RPM = fan RPM.

Those temps get much higher, you'll do damage to the motor... do not mess-around with this issue.
See if you have heat from the HVAC. If there is no heat, your water pump isn't working properly. I figured out my water pump was broken because of a high engine temperature and no heat.

was the oil cooler ever changed?
what type of coolant?
stock injectors?
stock programming or using a tuner?
Stock head studs?
