So, hop in the new 2016 this morning. Can't find a way without manually changing time to adjust for daylight savings. Is that right? It knows what time zone it's in but can't adjust time automatically? Tell me I'm overlooking something....

You got to change it manually I did my 16 this morning. Touch the settings icon and it's right there on the screen
I assume you mean the "clock" tab, and the setting is just to increment the hour by 1. I have no setting for daylight savings.
Sadly my cheapie furnace thermostat on the wall of my home can figure it out. My $200 Garmin GPS can figure it out too. Oh well.
My Ford Touch is very Hoaky... I like the older version in the 2011 better for controlling the phone.. This one is bad.. in that way and the new 3 coming out in Super Dutys in 2017 is supposed to be better. Who knows..
