I have a 1968 F100 with a 240 ci engine. When I do searches for parts I frequently see advertisements for engine displacements of 200, 250, 4.9L / 300, but not 240, especially on ebay. My question is, is a 240 considered to be the same as a 250?

No the 250 and 240 are completely different engine families. The 250 is the same engine family as the 200.
The 240 is the same engine family as the 300. It has the same block as the 300. It just has a different crankshaft, connecting rods, pistons and a slightly different head then the 300.
Almost anything that fits a 300 will fit a 240. As stated above, there are only a few part differences. And the differences in the head are minor (a 240 head will swap onto a 300 and visa versa), so manifolds, etc. are all interchangeable.
