Pretty sure that can happen if you're low on trans oil. Check with the truck level. Transmission warm and engine running. Shift into each position starting and ending in park before you check it. That is the correct procedure any time you need to check it.

we got a gallon out when we drain it. and we put a gallon back in.
now it will stall in 1st and 2nd.
if you go from park to drive its ok. park to reverse its ok. but if you go from 1st or 2nd to reverse it will die.
Only you can answer that, by checking the dip stick. Dixie 460 gave you the correct procedure, but to clarify what he he said, you leave the engine running to check the transmission fluid.(sorry Dixie 460, someone that doesn't know, may shut the truck back off after going through the gears). Anytime you do any fluid swap, don't just try to match what you poured out, always check the level.

You barely drained the pan.....a complete fluid change takes 16+ quarts. You wasted your time by only draining the pan. Mark Kovalsky has a great write-up for the proper procedure.

I had the same problem stalling in reverse. I also read somewhere on one of the truck boards, if the engine stalls in low 1 and reverse it is most likely the transmission filter has fallen down into the pan. My truck stalled in both gears. I dropped the pan and the filter came down with the pan. I purchased a motorcraft filter and made sure I installed with the o ring and pushed up into hole. Problem solved.
