Yes, only one wire, that's good and what you want. Grasp the rubber boot thing and pull it straight up and off, just like the connector(s) on the starter motor relay near the battery.
Please don't cut anything, reconnected wires can be really problematic (corrosion, etc.) in the future if the reconnection job isn't done in a decent manner.

YES!!! Pull "the wire". The one wire. You may have to look the connector over to see if enough of it protrudes from the insulation on it to actually contact the engine block. Or, stick a screw or nail in the connector and use it to contact the block.

Yes, it should pop right off. To ground it, you need to connect the metal inside the sender wire cap to grounded metal somewhere in the engine bay. The best ground is the negative terminal of the battery. But the engine block should suffice. To ground such a wire, it is helpful to have another long wire to reach ground with and make good metal to metal connection to what you are grounding, and ground. A long piece of wire with alligator clips at either end (called a "jumper wire" is particularly useful. But a nail pushed into the sender cap can work as well.
