320 will provide plenty of tooth for the urethane but if you don't want to go that low then 220 should be smooth enough to hide the scratches in the final coat. If scratches do appear you can always do a light sanding between top coats with a finer grit...not fun either but definitely easier than working over that epoxy!
That epoxy dust is a bitch. It's so fine, it gets into everything. I have a high quality respirator, I had to take a shower after every sanding session. I got it to 220, but I have these little white dots in the surface. I think they are tiny pits and the resin dust is in them. More sanding no doubt. I'm getting there. Slowly !!

Don't worry too much about the dots. Blow them out with compressed air and use a touch up paint brush to fill them in with urethane before you coat the rest. It'll be fine in the end.
