Welcome to FTE!

From what I've seen here, that type of roof rot is fairly common and very problematic/hard to fix.

I agree that you should look for a different cab.

Here's another vote for a replacement cab. AFAIK no one makes a replacement steel roof. It would be a very large difficult/expensive to warehouse/ship panel, as well as much more difficult to replace than it appears. A replacement cab would be far less expensive than the panel and labor, especially in the SW states.
Remember your truck is legally IDed/titled by the serial # stamped into the frame rail, so you can put any cab on your frame without any legal issues (assuming you have a good title on the frame you have). Any cab from 53-56 F100 - F650 will interchange with yours. The larger model truck cabs are often easier to find, and typically in better shape and less expensive, even if you have to buy the entire truck (selling off the big job parts, they are not reproduced, can often pay for the entire parts truck/make a profit.)

Try Johnny's F100 parts in Gilbert/Queen Creek area. They have lots of body parts, could be they have a roof. I'm sure they will have a cab.

'56 is going to be different. I vote for another cab, as well.

Yes, 56 cab is different but will still interchange with the 55 as long as you use the 56 doors and 56 hood hinges. All the rest of the sheetmetal forwards of the cab and behind it is the same or will interchange.
