Just to be sure...

Quick question.
Just finished a rebuild on my 300 and started her up. Unfortunately... no oil pressure. To make sure it isn't the gauge or sender I pulled the sender and started the engine briefly and zero oil came out. To me that seems like a pretty fool proof way of checking oil pressure or am I missing something?

Did you prime the oil pump?

I didn't replace it. Which I am kicking myself for now...

even a totally worn out oil pump should be giving you a little oil pressure. im guessing some mechanical connection to the pump is missing, like no drive quill or cam not turning or maybe a leaking/cracked/ failed gasket on the oil pickup tube. I've had that happen on one of my dragsters.
as hart suggested, pull the distributor, insert an electric quill to spin the oil pump with a 5/16 hex drive, and see if you get gage pressure or oil coming out the tops of the pushrods.
with no resolution at that point it is time to pull the pan and disassemble the pump and pickup and repair/replace as necessary.

I've already dropped the pan and pulled the pump which looks fine.

What you have said makes sense but how do you turn the pump from the distributor since it is connected to the cam shaft as well?

The intermediate shaft off the cam seems fine as well

You need to remove the distributor and put a 5/16 hex drive on a drill motor, long enough to reach the oil pump, and spin it until oil comes out the p.rods. If nothing comes out, then trace the route of the oil and find out why nothing is com ing out.
