I agree with f83 he is right, a basically stock idi with a turbo will suit your needs. if it is tuned right.
Alright, lets take it from the top:
You have an exhaust pipe, right? Stick your hand in front of it and feel the heat. Heck, feel the exhaust pipe. This is at idle.
Now, after going up a long hill and working the engine, try the same thing. Notice how much hotter the exhaust pipe is?
The problem is that steel can only get so hot before it starts to melt, warp or burn. And aluminum can take even less heat. This is why you need to get an 'EGT gauge'. It's just a gauge which measures how hot the air/gasses going through your exhaust pipe is.
When you do any mods to the truck -- like a turbo, adding more fuel, adding water/methanol or propane -- you have to be very careful not to make the temperatures too high or your engine will melt. But, you can also have the piston melt == expensive rebuild.
Now, the thing about adding power to these engines is that you don't need things like propane to do it -- you need more air in order to make any more power. Once you have air, you can just add more diesel... without the air, all you get is black smoke and no more power!
This is why people add a turbo. And then, add an intercooler, to increase the amount of air that turbo can push.
More air is key here.
Also, I agree with the earlier posters; a NA/c2 rev block is just fine; the head gasket is the weakpoint... though even that will have 10PSI of boost easily: Banks Power | 83-93 Ford - 6.9 & 7.3L>>Sidewinder® Turbo System These kits are designed to safely run on un-modified engines. And, with this kit, you can get a bit more power out of it than they suggest, but you have to watch your EGT gauge when doing it.
What are you pulling, a 2 horse trailer? Any idea what it weighs?
my 88 has a little over 494,000 miles on it, and it has never been opened up. it has a banks turbo on it and regularly sees 16+ lbs boost.
i keep exhaust temps under 1,000 degrees.
i also have no problems towing 20,000 lbs on the trailer all over the east coast.
the worst experience i ever had with it was having to drop down to 3rd gear pulling one hill, but it was 2 miles long and very steep.
since dumped the 5 speed and put the automatic in the truck,i can pull the same hill at 40 mph over the top with the same load, about the same as with the 5 speed..
