7.3 head checking -- what's OK?

Alright, so I need to throw together a decent engine for my truck, in about a month.
I've got a 1993 donor engine, which looks mechanically sound... though it was filthy.
In the process of cleaning it, I took the heads down to the car wash and pressure-washed the crap out of them. I noticed that spraying water into the intake or exhaust ports had water streaming out around the valves... obviously not a good thing!

I'm not sure what's wrong yet -- I'll have to get a valve spring compressor this weekend to check it out.

I've also got two other sets of heads I can play with -- both from 1988's, though I'm not sure if either of them are going to be better.

I don't really have the money to buy all the right parts, so it's going to be a matter of picking the best of what I have, putting it together and hoping for the best.

So, what should I look for, especially in the valve area? What's a quick/cheap test I can do, and what can I quickly fix?

Also, what about valve springs? I'm wondering if my problems are due to weak/need-shimming valve springs? Any thoughts?

I wouldn't be too surprised to see high pressure water lift the valve off the seat when sprayed from the port side.
