Get whichever one has 4.30s, that would be my first question as far as differentiators go. The new trans might be a good upgrade, but the 6.8/5R110W combo is excellent.
A 6.2 CCLB will only get 15mpg at 65mph or less, on relatively flat highway. I have gotten just over 15 twice on trips in my Supercab and I was the slowest vehicle on the road. I would not let gas mileage even factor into it.
I would get the 6.8l no questions about it. The V10 with that year will come with 4.10 or 4.30 gears.Get some 5 star tunes and enjoy. Most 6.2l trucks are ordered with 3.73s because dealers are clueless. The 6.2l mpg sucks too according to the numbers (under 10mpg) my dad is seeing with the 6.2l reg cab (3.73) at work.
The V10 feels a little stronger off the line because of the greater available torque, but the 6R140 has no trouble keeping the 6.2L engine right where it needs to be. The 6.2L has VCT that the V10 doesn't, but recent years haven't had anywhere near the trouble the earlier 3V 5.4L engines did.
I'd go for the newer truck if it was my money. Even if it has 3.73s it should have no trouble towing, and the ability to manual shift makes towing a lot more pleasant experience in my opinion.
V10 all the way. I have owned both and I was disappointed with the 6.2. The V10 got about 1 mpg better and had power in all RPM ranges, the 6.2 has power only above 4000 RPM's. My favorite truck by far was my '08 V10 crew cab long bed. I have a 6.7 now and still miss my V10. Call Mike at 5star tuning order a tuner with custom tunes and you will kick yourself for not doing it sooner. The V10 gets my vote for the best gasoline engine Ford has ever built.
Up to 15k lb it will occasionally be pulling a skidsteer + materials.
I'm mostly considering the day to day operation, mpg, and longevity.
I'm certain either will get the job done fairly well.

now is the new 6 spd a rock solid transmission like the 5spd?
All things being equal I'd lean towards the newer one simply because it has a much "newer" appearance, which definitely affects your image when you go to sell a job.
I am a self-employed contractor. When I go to someones house and they see my brand new 2014 dually, some may think this guy is going to be expensive. Some just say wow what a big truck you must have every tool. My experience has taught me that people just want to see a truck that is well maintained and taken care of and clean. People are embarrassed to have someone work at their house with a battered and worn out truck. However the newer truck would be the better write off. I would still go with the V10.
