Look into purchasing the Hydra Chip. That way you can choose just about any tuner and they can E-mail you the programs instead of having to mail the chip back and forth to them. You'll be very happy with the additional power bump and performance of the 160's - everyone just wants you to have all the supporting mods and check ups done before adding the new sticks.

I get that a lot. You might be able to cancel the order - wheels turn a little slowly in the overwhelmed injector world.
You are only making a mistake if you are unwilling to settle for a subdued tune for the injectors or unwilling to make the necessary modifications to your truck. If you get a consumer-updateable tuner (like the Hydra, F6, or Infinity), then you can order tunes for the truck as you upgrade the hardware to take more torque. If you choose to get tunes that don't use all the available fuel in an AC 160, but instead use about the same fuel for a 60 HP tune on a stock injector... you'll have lower EGTs and plenty of power. You will still want some gauges, but the stock truck will take this treatment.

All kidding aside, while the diesel community has a lot of good tuners available to enthusiasts like us, it's our loss with you no longer tuning for 7.3L owners.
You better keep posting here for us though, otherwise we may have to send "Tiny" to come visit you.
