Possible coolant issue

So yesterday I started doing my coolant flush on my 2006 sc 6.0 and after draining everything out, I pulled the thermostat, rebooked everything as per all the write ups here. Put my 2 quarts of restore and set the truck to 1200rpm and ran if for almost 2 hours to get it up to operating temp. Now the issue I noticed was that after almost two hours (according to my sg2) my ECT only seemed to peak out at about a 150* and my EOT was about 6-7* more. Now at this point is was 9pm so I had to stop and begin flushing as I didn't want to upset my neighbours.
So what I'm wondering, is there something wrong? Or did I miss something? To my understanding the ECT should be at around 180-190* by this point should it not?
The truck is sitting drained right now because I was going to run restore plus through it and install my xdp coolant filter on it.

Is the thermostat back in it?

No I left it out for the night with no water/coolant/restore in it as I was planning on doing the restore + part of the flush today.
I should not that I've never seemed to have any issues coolant wise. The cap on the degas bottle shows no signs of puking, and the only smoke out of the tail pipe is a a bit of blue on start up before she's fully warmed up.

A couple of possible reasons for the low temp now would be either it cleaned up well and is cooling better and it's not going to get warmer until until the thermostat is reinstalled, or there is an air pocket below the temp sensor. It not uncommon to have to add coolant for a few day after a drain until all the air gets worked out of the system.

Rusty that makes a lot of sense. I kind of figured that there will be air pockets that will get worked out. Though the clean factor never dawned on me. Clearly the Restore is one hell of a product. This probably explains why when I drained the Restore it didn't come out as merky and milky looking as I thought it would.

Yeah exactly, everybody bashes them, but I wanna be that guy that gets 500,000km out of my truck. Hence the routine maintenance like clock work.

Your truck will absolutely run cold with no t-stat. That's the only reason it has one.
