I would not be overly concerned about the spark plug issue. I had my 5.4 Expedition launch a plug and i caught a second before i went. cheap easy fix, not a huge deal.
I've had 3 V10s 00,02,04 and changed plugs myself on the 04 and (early)02 without issue and put a combined 65k ish miles on them with no plug issues.

I have a 2000 Ex. Never launched a plug. I've had the vehicle for about 10 years. A spark plug change is relatively easy anyway on that vehicle except for the rear passenger one. You have to do that one by feel if you don't move the vac hoses and throttle/cruise cables. Don't sweat it.
We have 2000 with no plug problems. Except changing them, particularly the passenger rear plug sucks. Love our EX though. If I was rich I'd have one for each day of the week. I hate to bring it up, but the problem your most likely to have is the studs breaking on the exhaust manifolds. I put on Banks headers and am very happy with them. Others have replaced the studs with new ones or used bolts instead.
