I bough an infrared thermometer to see what my real water temp is. My question is where do you measure to determine the true water temp?
If all is working well then 190-210 degrees would be the correct temp. My long term goal is to replace the temp sensor if needed and adjust the stock gauge to read close to the center at 210.
I'm not sure. For one thing, if you're actually working the engine, you'll see it vary depending on location -- you shut the engine off after having just climbed a hill with a trailer, and latent heat will heat up the water inside the engine by a few degrees.

Secondly, why not just get a proper digital water temp gauge? My Chinese one cost me around $30(inc sender and shipping); I replaced the second sender which controls the idiot light, and have a nice, responsive sender. Unlike with an analog(even a good one), it's nice seeing drops or gains of a couple of degrees -- Once you know what your temps usually are, you can spot a failing thermostat or other problem pretty quickly.

Does your digital gauge have a warning light? I am not an idiot but I am fat, dumb and happy most of the time and like the security of warning light in addition to a gauge.
