I once observed a 7.3 on a Harbor Freight "2,000 lb." engine stand. It had wood blocks under the oil pan. I asked the owner if the stand was strong enough to hold a 7.3, and he replied "No, that's why the blocks are under the pan."
I had Matt's dead motor on a 750lb hf stand pretty much fully dressed minus the turbo.
The stand did not like it... but it held it.
I did this out of necessity, and strongly recommend noone else EVER try it. I did not allow it to hang free on the stand... it had a safety tether to the 2ton cherry picker in case the stand mount welds broke.
The 2klbs stand is more than adequate.
I actually have rigged mine with big pneumatic wheels so i can push these heavy monsters across the dirt without a plywood highway.
Lowes usually carries bolts of the right size/pitch if you need different lengths than the tranny to engine mounting bolts.
