Check guage
I have 06 f550 6.0 havin problems truck runs great but when on the interstate doing above 65 mph check guage comes on then guages reads hot for engine when I pull ova turn truck off n turn key to read temp it's not running hot we got coolant changed thermostat n sensor still does it if I go below 60 mph it runs fine anybody have a clue

You need an odb2 gauge, the dash "gauges" are only distractions.
You could have 15* delta between coolant and oil temp, newer flashes through the cel for that, oil cooler is usual suspect.
The computer will defuel if oil or coolant temp get too high.
Maybe your radiator fan is not working.
The scangauge2 will give you the readings you need to know what is happening.
Also smartphone apps/computer with odb2 adapter could also work.

I keep seeing posts argueing for the use of readers for diagnostic purposes. I admit to being lazy and ignorant on these things, so please advise ...
