if i did the ege delete and didnt change the oil cooler and later found out it was pluged what symtoms would it cause or damage

If you do the egr delete because you blew your egr cooler you have to change the oil cooler because thats the reason the egr cooler blew. If you dont change the oil cooler and it is plugged it will blow getting oil in your coolant, over heat and blow your engine if not caught immediately.

Did you do this step right?? Run engine until it warms up to operating temperature (190*ECT. Or close) . Park truck overnight on a slight decline with nose down. In the morning before starting truck remove EGR valve, use a flash light to look down into the EGR port.. If Your EGR Cooler is leaking that is where you'll see Coolant.
