The stock logs expand and contract so much that I would be worried that grade 8 bolts would be dragged around and would hog out the threaded holts in the heads.
The key, I believe to this entire this is that the nuts corrode and STICK to the manifold. When this happens, the heat cycles eventually fatigue the stud.
If stainless washers were used under the nut, that might be the solution.
