It sounds more to me like your idle is adjusted FAR to high. What are your RPM's reading? Your choke should turn off once you tap the gas, being it does it sometimes it may be sticking. I'd give both a thorough run through.

Should have 3 idle speeds. Mine does, fast idle around 1100, slow idle around 750 and in gear around 550.

Take the air cleaner off, then start the truck. When it's idling fast, look at the door at the top of the carb(the choke). If the engine is warmed up, the choke door should be standing straight up. If it's at a angle, carefully reach over with one hand and hold the choke straight up, and then take your other hand and kick the throttle open quickly. It should idle down if that's the problem. As soon as you let go of the choke and it goes back to the angle, it will probably idle back up again when you press the gas pedal.

If this turns out to be the problem, loosen the large round black piece on the driver's side of the carb and turn it in the "leaner" direction so the choke door will stand up straight.
