Every 100K -175K I had the overhead set on my Detroit and Maxadyne. I have never done it on my 7.3's.

The 7.3 doesn't work that way.
We have injection pumps and steel lines.
I've been looking and can't find any specks, 7.3 have hydraulic lifters you, you want 1/4 to 3/4 turn of lash before the pedestal bottoms out. Unless you have over 200,000 or many hours of idling on it I wouldn't worry.
You might need new injection system, that is a every 100,000 mile tune up or when your mpg drops
I have 213K on one and 177K on the other. The one w/ 177K has a new injection pump. The one w/ 213K is showing it's age - loosing some power and dropping fuel mileage, still starts easy on cold days.
The 7.3 idi are diffrent than most diesels, the injection pump and injectors are ware out faster than most, also as the injection pump ages the timing can get off.
When you lose power or fuel mileage the normal tune up steps are
You start checking for proplems
After that the First step is the filters, air and fuel, fuel cleaner
2 check the timing, very few can do it by ear you need to have it done or buy the tool
3. injectors and Injection pump if you have over 100,000 on them
Then look for other propblems

I like to have the intake off when I do it.
You have to change the push rod to change the lash
You roll the engain over to the compression stroke on the hole your working on.
Then you back the rocker bolt off
then you find where it just starts to compress the lifter. That is the point where you count turns to 20ftlbs 1/4 turn is lose and 3/4 tight you want about 1/2.

For a bleed down tool this is what I found Tappet Bleed Down Wrench 303-220 T83T-6500-A
I made my own so I don't know how good they are.
As for specs like you want, I can't find any. What I got off the last one I did was .040-.047 was where it was, I put in new push rods and got it down to the .020s witch is a little tight I haven't had it running yet so that might be too tight.
I got a set of push rods from napa and I think that they are an over size to take the slack out of worn rockers

The 7.3 you do with a timing light. I wish they were like VW.
