2000 V10-Ex...
We're there any issues besides the spitting ugs on the 2000 V10's?
I'm looking at a very very low mileage one and I'm worried about the plug issue.

I have 190K on my and no plug issue. You never know.

Even if one spits, it's not that hard to fix. Or better yet check the torque on them and you're good to go.

Buy it, put new motorcraft plugs torque them to correct torque and forget about it. I had 228k on my previous Ex with no issues here. The other issue that the V10 has its known for cracked exhaust manifold bolts. Again not a big deal, other than that it was my most reliable vehicle ever owned.

IMO the reliability of the V10 should be your least concern. I'd be more concerned with tires, front end & steering components, and such.

Yep. Tires or ball joints are likely to cost much more than you will ever spend on the engine itself.

No offense intended, but it really isn't like that. You CAN know, all it takes is a little proper maintenance on the plugs (proper torque on a cold engine) and you'll be fine.

Third set of plugs no issues
I have 215,000 plus miles and I am on my third (counting original) set of plugs with no problems.
