They both stop great. I have reg maintenance done on both of them, and my mechanic never mentioned about changing the fluid.
But as mentioned......."piece of mind" And it doesn't cost much

Your mechanic may have flushed the fluid when brake "maintenance" was done. It is normally in the procedure when replacing calipers or wheel cylinders.
Yeah I've never replaced my brake fluid either, maybe the previous owner did but I'm not sure.
I can tell you one thing, though. When I replaced the caliper I lost quite a bit of fluid, and the level in the master cylinder BARELY and I mean barely dropped, so I couldn't imagine how long and tedious the process would be to completely flush the fluid on a truck like this.
You suck most of the fluid out of the reservoir with a turkey baster, then let it bleed down to almost empty and fill a bit (not full, just a bit) with clean fluid and then let bleed down. Watch for the clean fluid AT THE BLEEDER, when the fluid is clean at the bleeder close it and move to the next. Once you get clean fluid to one bleeder the rest go fast. keep fluid in the reservoir at all times. When finished bleeding fill reservoir and your good for 5 years.
