You can also go as high as 305/70/16, but I think they'll rub a little....
Would that be solved with the standard minor trimming of the wheel well inner plastic so that the front wheels wouldn't rub when turned or is the problem bigger than that?

Not sure, but you might get a little spring rub which can only be solved with more negative offset or spacers. Negative offset or spacers causes more fender problems. I have 8" of lift and 315 tires on rims with -51 offset, my tires barely clear the back of the front fenders. The more negative offset you go, the bigger the radius you get on the steering.
FWIW the stock offset is +12 on a 7" wide rim, 4.5" BS
you can use the link below to enter the stock info on the left, then mess about with the numbers on the right to check clearance issues.

I think it's only minor rubbing, but I don't know for sure.
My truck is 2wd and lifted 6 inches. It sits only 2 inches taller than a stock 4wd truck and clears 315/75/16 perfectly fine. So I'd figure that 305s would fit without too much rubbing.
I have stock suspension with 160k miles. Have been running this size in Firestone A/Ts for about a year. They rub whenever the wheel is turned full lock. It has worn a groove in the plastic wheel well. I only hear it when I move in reverse.
I had H/T Nittos before for about 30k with no rub. Don't buy these tires!!! They were terrible, esp in rain.
