Not aware of any fuel pressure changes between shifts. Easy enough to check - hook a fuel pressure gauge up and see what you are getting at idle and then between shifts. Typically you will start getting system lean codes if the symptom is this bad. Those will be P0173 and P0174 - one code for each bank. It's time to have it hooked to a scan tool for actual diags.
The fuel pump relay is causing the random shutdowns. It’s located on the rear of the fuse box under the steering wheel. You’ll need a new fuse box or know someone to service it. It’s soldered on so you can’t just pull and replace. This will fix the issue. No codes will show on the scanner. It’s not the fuel pump, fuel regulator or ECM.
If you put a new relay in you will have no more issues with the stalling.

The fuel pump relay in the 2000-2001 is not under the fuse panel, so it can be easily changed.
It was moved to under the fuse panel in 2002.
For a 2002 and later, if the relay is bad you don't need to replace the fuse box, there are several ways to wire a bypass circuit with a new relay, just search this form.
