I have ran Edelbrock or holley on my fords. I have switched to holley for 2 reasons: tuneability and the float bowls are at the ends and don't boil the fuel out like the edelbrocks.
I have had edelbrocks that ran very nicely but in performance, the edelbrock didn't let enough fuel through the needle and seat to support engine demands so holley it was.
On the edelbrock carbs, the engine heat would boil the fuel from the carb and when hot out you had to grind on the starter for like 5 minutes it seemed to get enough air into the intake to burn all the fuel vapors and get them to start, holley doesn't do this since the fuel bowls are open on the ends and shed heat better.
