With only a 2" lift I would think that the standard Bilsteins would work.

You got it. Google Bilstein shocks and you can find some pretty good prices. Might also check on e-bay. Stick with sellers that have a good rating.

What is the ride like with Bilsteins? I'm considering a new set of shocks, want to get the smoothest highway ride (yeah, right, it's a truck...). Stock truck, 2005 F250. On the original shocks - at 65K miles and 7 years old, should I just assume they are toast, or should I test them somehow?

LOL--IMHO they were toast when they rolled off the showroom floor. I've got 168K on my Bilsteins and they still feel like new.............SMOOTHHHHH
