coolant questions

Hello
So today i decided to change my thermostat because i thought my old one might be bad. I went with the 195 fail safe for my 390.
my truck ran around 150 constantly, except when i idled it would rise pretty fast. that is why i changed the thermostat. now that i have the new one, the truck runs around 190-200 constantly :/ and it still rises in temp but not as fast.
So question number one is does the thermostat affect how hot your engine runs?
Q-2. How do i know if the new one is working?
Q-3. What do your old 390's run at?
Q-4. I have never used antifreeze coolant.... doesnt freeze where i am. I was told dont do that anymore... so what would be the proper amount to put in it?

These old trucks wont sit & idle long without getting hot, keep it moving 20 mph & you can pitch the fan. 180º T-stat is what it was designed to use. It opens at that temp,

I have lived in North Carolina all my life where it freezes. 50/50 mix is recommended here. Don't know what would be correct for a no freeze zone.

Sounds like the old T-stat was working properly. I don't sweat the gauge setting too much as long as it stays the same.

50% anti freeze with 50% distilled or RO water and add two bottles of Water Wetter. You will be OK.

thanks guys, sounds like im in the clear. my engine is performance built, think i should hop back down to the 160 tstat? I believe thats what was in there before and all autozone carried was the 195 fail safe and the 160.

Anti freeze is also called coolant. The thermal conductivity on glycol based coolant is a little less than straight water but it also has all the rust and corrosion additives, plus it raises the boiling point. Every engine I ever ran on straight water turned to an ugly rusty mess real quick and often the water pump took a dump in short order too.
Water wetter is good.

180º not 160.
