Is the fuel where you live 10% ethanol?
Older carb kits don't work well with new fuels.
If the accelerator pump in the carb kit is not compatible with the current fuels even a new one will be affected by fuel, and not work well.
I guess your truck has a Quadrajet carb, and bad accelerator pump is typical of your symptoms. I spent my teen years on late 70s GM trucks and cars.
Most carb kits don't come with a compatible accelerator pump and you need to get it as an upgrade. Check with your parts guy or where the kit came from.
Choke malfunction is possible but usually a start and dies condition, also make sure spring is under accelerator pump or it wont work at all.
