The blank screen is for driving at night if you want a dark dash. It's nice on those long interstate runs to turn off all the lights, make everything as dim as possible. Really saves the eyes from fatigue during the night.
When I'm hooked to a trailer, I really care about tire pressures.
It drives people crazy because I'm ATD about it but whatever.

I hate blow outs so I do what I can and I don't want to kill someone.
Someone locally was killed last year because another driver didn't latch his trailer and didn't use safety chains.
Trailer hit a bump, came off ball, hit a Sport Trac in another lane shoving them into the Tennessee River and the passenger (the drivers dad) died from drowning because he couldn't get out.
Not that this has anything to do with air pressure but I use this story as an example of attention to detail.

Can those after market system display the trailer tires AND the truck tires? (with their sensors)
I have never looked into them but probably will. When we retire we will be driving trailer to FL every winter and back in the spring, taking a long route (for fun)
There are aftermarket systems that can monitor many more than 4 tires. Only problem is you have to use their sensors which may mean removing the factory sensors. Some of the systems just attach on the valve stem but I'm not a fan of adding that extra mass on the end of a rubber stem.

You could install the aftermarket sensors in the wheels with the factory sensors. They should be able to operate independently. One feeding the truck's CM and the others feeding the trailer and truck pressures to the Aftermarket control module.
